Hello everyone. I’m here in Colorado visiting family. I leave tomorrow. It has been a whirlwind of activity around here. My brother showed up on the same day I flew in. He had two of his kids in tow.
He drove up from Alabama to surprise my dad for Father’s Day. We also celebrated my nephews High School graduation party and my sister’s birthday. We had a blast.

We ate out a lot.
Went bowling. That was fun. It had been years since I had bowled.
Went to see the Manitou Dwellings.
Visited the Air Force Academy. Beautiful campus.
The Olympic training center was a hit.
Keystone Colorado was breathtaking.
We celebrated my sister’s birthday at our favorite German restaurant, with much beir and schnitzel.
Good times!! We made wonderful memories!! We did so much more than that. So much fun!! Like the BBQ we had for my nephew to celebrate his graduation. My mom made all the standard fixings. Ribs, potato salad, coleslaw, and Mac n cheese. I made a Caprese Salad. Simple, easy, and elegant.
Here’s what you’ll need.
Two 16 oz containers of cherry or grape tomatoes
Two containers of fresh basil
Two 8oz packages of fresh mozzarella cheese.
1/4-1/2 cup balsamic vinegar
Sea salt and pepper to taste.
Rinse, drain, and slice the tomatoes in half into a serving dish.
Slice then cube the fresh mozzarella and add to serving dish.
Rinse the basil and blot dry between two paper towels.
Remove the basil leaves from stems and add to serving dish.
Mix it up.
Drizzle with balsamic and sprinkle with salt and pepper. Mix it up and let sit for 10-15 minutes. That should be long enough for the flavors to mingle and marry.
This recipe is for a crowd and would be easy to take to any summer gathering. It is also simple enough to half the ingredients for just your family.
