Easy Beef Stroganoff 

Are you a food snob?  I am. I admit it. I will not eat bad food. That includes going out. I have been known to send a few plates back. My husband gets upset with me, ” why do you have to be that way”?  Umm, because I’m not eating ill prepared food, that’s why. Look, I get it. Cooking takes time and some patience. Some of you might be just starting to cook for yourself and others aren’t interested in cooking at all. That’s ok. If you’re just starting out, people like me will teach you. If you hate cooking, but love to eat, people like me will feed you. However, if you’ve been cooking for fifty some odd years and bragging about. You should be able to back that up! We do not make a meal for company with groundbeef and canned cream of mushroom soup over noodles. Now I like ground beef, you know, tacos, hamburgers, meatballs, meatloaf, pasta sauce, and shepherds pie. I’ve also been know to crack open a can of soup. With a grilled cheese sandwich, that’s a meal made of childhood memories. Cooking for yourself, your family, or for others doesn’t have to be complicated or difficult. I find that simple is best. Which brings us to this. Easy beef stroganoff.


It takes about 20 minutes to prep the main ingredients and about 45-60 of cook time.

Here’s what you’ll need.


2 pounds of stewing beef, 8 oz of mushrooms, 16 oz package of wide noodles, 1 quart beef broth,  1 onion, 4 cloves garlic, 1 cup sour cream, 1/4-1/2 cup ketchup, 1 teaspoon Worcestershire sauce,olive oil, salt, pepper, 1-2 tablespoons cornstarch.


I like to make sure my beef is all about the same size. I cut into 1 inche cubes.


Add olive oil to pan. Heat to medium.

Add beef.  Add salt and pepper.


While that is browning, star preparing other ingredients.  Remember to change out that cutting board.


Dice onion.


Wash those mushrooms, take out the stem, slice them. Have you checked the beef?  Give it a quick stir.


When your beef is brown add onions and mushrooms.




Press your garlic.


Add to beef.


Mix everything up and cook till onions are starting to get translucent and mushrooms are starting to soften.


Reserve one cup of the broth. Add remaining broth to beef mixture.


Add ketchup and Worcestershire sauce. Give it a good stir. Give it a taste. If you need to add salt. Add now. Remember a little salt at a time. You can always add more, but you can’t take it out.


Stir and let simmer for 45 minutes. When the beef mixture has been simmering for 45 minutes. Start your water for your noodles.


Add salt and bring to a boil.


Add noodles


Bring back to a boil, while stirring. Cook according to package directions.

While the noodles are cooking, finish the sauce.

Add 1-2 tablespoons of cornstarch to reserved broth. Mix well. Pour into beef mixture.



Stir. You should visibly see it thicken.



Remove from heat. Add 1 cup sour cream. Stir. Set aside.



Drain noodles.


At this point, you can add those noodles to the beef sauce, but for photo opportunity and my mother not being grossed out ( she doesn’t like her sauces and noodles mixed) I served like this.


Doesn’t that look good?!  Add a green salad and you have a simple meal good enough for everyday and company!!
